I’ve always had wonderful neighbors every place I’ve lived here in Washington. One particular friend was a next door neighbor when I was in medical school. Some days I would come over just to chat and if it was later in the day, she was usually feeding me something for dinner. I don’t really remember what was on the menu on any particular day, except a delicious chicken and bean dish that I still make when fall arrives, and well, here we are. (This applies to Washingtonians, of course. Lucky you if it’s still sunny and warm where you are.)

I will be honest here, I don’t like to cook. I don’t find it fun or entertaining. I’m glad some people love it and make a career out of it, because I do like to eat delicious food! So here is the seriously simple and quick chicken and bean recipe that my dear friend Donna shared with me.

  1. Add two or three cans of your favorite beans to a crock pot depending on size. (I use black beans and white kidney beans)

  2. Place fresh or frozen chicken breasts into the crock pot and nestle into the beans.

  3. Add 1 cup of water.

  4. Sprinkle in your favorite seasonings, cover and cook!

I generally use frozen chicken breasts and sprinkle with Montreal Steak Seasoning and cook for 6-8 hours while I go to work. When I walk into the house, I’m greeted with the delightful aroma of dinner and it’s ready to eat right away!
